It’s a Louisiana Saturday Night over here, Y’all! And tonight we are cooking some Eggplant Parmesan (MY FAV!) with some fresh eggplants just picked from the garden!

They will go well with the 500 lbs of pasta I accidentally cooked earlier. HEHE! 😉

Am I the ONLY one who does this? I always cook enough pasta to feed approximately 125 people and I DON’T KNOW WHY! Maybe it’s just my Italian roots coming to the surface. 🙂

Hi Friends! It is a good thing that we decided in advance to cook our 4th of July feast indoors this year, because it is once again STORMING OUTSIDE! We told y’all yesterday that we were making a new recipe called CROCKPOT RIBS. But what we didn’t tell y’all was that we were also making 2 other crockpot recipes for today as well.
