It’s a Louisiana Saturday Night over here, Y’all! And tonight we are cooking some Eggplant Parmesan (MY FAV!) with some fresh eggplants just picked from the garden!

They will go well with the 500 lbs of pasta I accidentally cooked earlier. HEHE! ๐Ÿ˜‰

Am I the ONLY one who does this? I always cook enough pasta to feed approximately 125 people and I DON’T KNOW WHY! Maybe it’s just my Italian roots coming to the surface. ๐Ÿ™‚
